Although evidence suggests that pasta existed in Italy as far back as its first inhabitants, it reached its highest peak in the 18th and 19th centuries.

Naples became the centre of pasta production thanks to its climate and port. Pasta was first produced in Sicily before the Arab invasion in the year 878.

Marco Polo is said to have brought pasta back to Europe from one of his voyages to China.

Did you know that the Italian composer Rossini was a great lover of pasta and while in Paris had it brought in from Naples?

In Spain, its consumption was consolidated in the 18th century during the reign of Carlos III.

Today, the beneficial effects of pasta have been scientifically demonstrated: its carbohydrate content (energy) and easy digestion mean that it is recommended by dieticians for the whole population and prescribed particularly for sportspeople and those people subject to great physical effort.

One of the greatest Spanish specialists in diet and nutrition, Professor Grande Covián, had a phrase that said:

PASTA IS HUMANITY'S BEST FOOD INVENTION OF HUMANITY

Some of the reasons for including pasta in our diet:
· Pasta is not fattening if we do not abuse sauces and fats.
· All experts in nutrition agree that pasta is necessary for a healthy, balanced diet.
· Pasta is easily digested and mainly provides carbohydrates, a source of energy  for daily activity and sportspeople.
· It is a cheap dish.
· It is a complete, nutritive foodstuff, creative and easy to prepare, and can be eaten by itself.
· Pasta is a universal foodstuff, appetising at any age and good for everyone.
